Call me “Chef”: Getting back into cooking… AGAIN

HELLO, fellow foodies! I have been awful at sticking to my schedule and keeping with my goal of cooking twice a week. Mercury is 100% in retrograde BECAUSE THE PAST THREE WEEKS HAVE BEEN CRAZY! Thankfully, last week I was able to cook twice. I cooked Wednesday and Thursday and I am happy to report that both meals were a success! I am glad my cooking skills are getting better and I have even mastered the BBQ. I am terrified of cooking on the BBQ so learning how to turn it on and use it was a big thing for me.

This week I chose to make:

  1. Honey Butter Salmon with Sweet Potatoes and Brussel Sprouts
  2. Fettuccine Alfredo with Seasoned Chicken and Caesar Salad

I love cooking fish, the house smells awful afterwards but I just love being creative with new Seafood. I wish I had more Honey butter sauce (1 tsp of butter, 1 tbsp of honey and 2 tbsps of soy sauce) on the fish to marinate it, but it was still yummy and I loved the chopped up Sweet Potatoes. The biggest thing for me was that I did not use any recipes, I was able to cook everything on my own. That means SERIOUS PROGRESS! Now, I just have to work on my food looking “Insta-worthy” because my meals always look gross in photos (aka the Salmon).

The fettuccine was amazing and on Thursday I was craving pasta, so it was like heaven in my mouth. The chicken had a little bit of seasoning salt on it but everything else was very basic. Fool-proof dinner!

I am glad I was able to do a little update and get back into cooking again. I am hoping to get back into a good schedule where I make time to cook more, I need to get organized and start focusing on my goals again. If I am able to stay organized and keep cooking, I can slowly try more difficult recipes. Thank you for reading and if you have any recipes you want me to try, let me know!
